Cheddar & Mustard Muffins

Ingredients for four

    •  280 g plain organic flour
    • 1 tbsp.  baking powder
    • 1/4 tsp. Mustheb mustard salt
    • Freshly ground black pepper
    • 1 free-range egg
    • 3 tbsp. Mustheb Bonnie Wholegrain
    • 2 tbsp. honey
    • 120 g grated strong cheddar and a pinch of blue
    • 300 ml milk
    • 65 g melted butter


    How-to

    Whisk together egg, mustard, honey, milk and melted butter. Add this mix the dry ingredients (flour, baking powder, salt, pepper and cheese. Mix gently, but thoroughly. Divide the muffin batter in a buttered 12 cup muffin tin. Bake in the preheated oven with 200° C until they rise and get a golden brown colour.

    Serving

    Serve warm with a small slice of ham, a nice salad or chutneys ... or gobble up directly from the oven before someone else claims their right …

    Toptip

    You want it more colourful? Add 2 tbsp. chopped onions and/or bell peppers
