Recipes Food Festival Stornoway

Here are the recipes I presented during the 5th Fèis Bìdh Food Festival 13th April 2019 at An Lanntair in Stornoway

Dressing for a potato salad (for 1 kg potatoes)

  • 150 ml water
  • 2 tablespoons white wine vinegar
  • 2 teaspoons ‘Bonnie Wholegrain’ mustard
  • 3 tablespoons olive oil native
  • 1 shallot
  • green of ½ bunch spring onions

Boil the water, add vegetable stock. Stir vinegar, olive oil, mustard, garlic and onion in the warm broth. Taste with salt and pepper. Cut the peeled potatoes in cubes and put them warm into the dressing, add a chopped apple. Let steep for min 2 hours or better overnight, decorate with parsley.

Dressing for a beetroot salad

Mix all together and pour over 4 steamed beetroots cut into cubes, a tablespoon of finely chopped fennel, a tablespoon of roasted sunflower seeds and add a teaspoon chopped dried cranberries

Dressing for a salad with carrots and orange

Mix all together and pour over 3 medium-sized grated carrots and wedges of one orange.

Dip for mixed Crudités
Mix 2 teaspoons ‘Taste-of-India’ mustard with 300 crème fraiche serve with sticks of carrots, cucumbers, red and yellow peppers, celery and and and …
