Orange Chilli BBQ Marinade

Ingredients for approx. 500 g BBQ stuff (like lamb, chicken and vegetables as well)

  • Juice and zest of ½ to 1 orange (depending on size)
  • 1-2 tbsp native olive oil
  • 2 clove of garlic
  • 3 pimento grains
  • 1/2 tsp black peppercorns
  • ½ - 1 onion (depending on size)
  • 1 tsp Infernal Bliss Mustard
  • ½ tsp Chilli Sea Salt


Put all ingredients into a blender and mix well. Pour the marinade with the meat and/or the vegetables and make sure that the BBQ stuff is covered with marinade everywhere. Marinate overnight for at least 1 hour in the fridge.


To ensure the marinade reaches the stuff everywhere, use a closable freezer bag or by using a bowl, stir more often. Take the stuff out of the fridge one hour before grilling for reaching room temperature. Strip off the marinade before grilling. Shortly before the end of the BBQ brush the rest of the marinade onto the meat and/or vegetables.
