Dressing for a potato salad

Ingredients for 1 kg potatoes

  • 150 ml water
  • 1 tsp organic vegetable stock
  • 2 tbsp white wine vinegar
  • 2 tsp Bonnie Wholegrain Mustard
  • 3 .tbs olive oil native
  • 1 shallot
  • green of 1/2 bunch of spring onions
  • 1 apple

Boil the water, add vegetable stock, stir vinegar, olive oil, mustard and onions in the warm broth. Taste with salt and pepper. Cut the peeled potatoes into cubes and put them warmly into the dressing. Add a chopped apple. Let steep for minimum of 2 hours or better overnight, decorate with parsley.

This dish is a full meal and doesn’t need anything extra. However, if you bite on the mustard seeds it can happen that you get a big desire for a bratwurst.
