Cheddar & Mustard Muffins

Ingredients for four

  • 280 g plain organic flour
  • 1 tbsp baking powder
  • 1/4 tsp Mustard Sea Salt
  • Freshly ground black pepper
  • 1 free-range egg
  • 3 tbsp Bonnie Wholegrain Mustard
  • 2 tbsp honey
  • 120 g grated strong cheddar and a pinch of blue
  • 300 ml milk
  • 65 g melted butter

Whisk together egg, mustard, honey, milk and melted butter. Add in this mix the dry ingredients (flour, baking powder, salt, pepper and cheese). Mix gently, but thoroughly. Divide the muffin batter in a buttered 12 cup muffin tin. Bake in the preheated oven at 200° C until they rise and get a golden brown colour.

Serve warm with a small slice of ham, a nice salad or chutneys ... or gobble up directly from the oven before someone else claims their right.

Top tip
Do you want it more colourful? Add 2 tbsp chopped onions and/or bell peppers
